Ports are sweet slightly fermented wines blended with brandy. Ports are higher in alcohol than table wines. Don Quixote Ports are made from traditional recipes in the Portuguese style using our own brandy. The brandy interrupts fermentation while the wine's natural sugars are high.
We are the only Port producer in America who makes both the wine and brandy used in their Port. We never add sugar, glycerin, or other sweetening or thickening agents. Instead, we rely on the fruit's natural sugars.
We age our Ports in French oak and draw from the barrels using the Spanish Solaria method. Our barrel room exploits the benefits of the high mountain desert of Northern New Mexico where hot days draw the Port deep into the oak and cool nights push it back out. This constant cycling promotes intense aging with maximum depth, flavor, and character.

Mon Cherie is a special vintage cherry wine made by blending lightly fermented cherry juice with Don Quixote’s Mon Cherie
Cherry Eau-de-Vie. The bringing together of cherry wine with cherry brandy creates a sweet combination you cannot find
anywhere else.
Our Mon Cherie Cherry wine is finished in French oak barrels and blended at bottling using the Spanish Solaria method. We
do not filter this wine, thus ensuring all of natures flavors arrive in the bottle. Unlike most cherry wine, we do not cut our
cherry port with grape juice. Our Mon Cherie cherry port is made from 100% sweet cherry.

Spanish for sweet, Dulcinia was the vision of beauty and perfection Don Quixote gallantly vowed to defend and adore. Our Dulcina upholds Don Quixote’s unquenchable quest to meld life’s sweetness and beauty with the romance and passion that makes life worth living.
Dulcinia is made following a centuries old tradition of slightly fermenting grape juice and then, while residual sugars remain high, interrupting fermentation by adding brandy. We produce both the wine and brandy on site. Prior to aging in French oak barrels we blend in just enough Mon Cherie Cherry and Rio Rojo Ports to flirtatiously enhance the color, feel, and sophistication that was Don Quixote’s Dulcinia.

Don Quixote's Rio Rojo Port is a fortified sweet wine made from a blend of three distinct grape varietals. Made in the
Portuguese style, Rio Rojo is fermented to 3% alc. before Don Quixote brandy is added. The brandy interrupts fermentation
while natural sugars are high. We age Rio Rojo in French oak and draw from the barrels using the Spanish Solaria method.
Our barrel room exploits the benefits of being in the high mountain desert of Northern New Mexico where hot days draw the
wine deep into the oak and cool nights push the wine back out. This constant cycling promotes rapid aging with maximum fruit
flavor.
Rio Rojo is a sweet Ruby red port. Our current vintage is 5 years old.

Don Quixote's Rio Blanco Port is a fortified semi-sweet wine made by blending three distinct white grape varietals. Made in
the Portuguese style, Rio Blanco is fermented to 3% alc. before Don Quixote brandy is added. The brandy interrupts
fermentation while natural sugars are high. We age Rio Blanco in French oak and draw from the barrels using the Spanish
Solaria method.
Our aging process seeks to promote the rich oak flavors connoisseur expect from fine Ports while maximizing the fresh fruit
flavor that makes white Ports enjoyable.
Rio Blanco is a semi-sweet white Port. Our current vintage is 5 years old.

Angelica is our sweetest fortified wine. Angelica is not technically a Port since it was first made by Spanish Missionaries in
Colonial New Mexico in 1628 as a sacramental wine. Our Angelica is made the traditional way by mixing unfermented juice
with our own Don Quixote brandy. Angelica was America’s first export product, growing so popular in Europe that Spain
outlawed its importation. It was originally produced from the native Mission and then later the Muscat grapes. Don Quixote
is proud to bring this native New Mexico product home. We are one of only a handful of producers worldwide making this
angel’s nectar.
Our Angelica is blended with Muscat brandy and barrel aged in French oak using the Spanish Solaria method. Every bottle of
Angelica is a mixture of both young wine full of robustness and mature wine dripping with sweet sophistication. Our current
vintage is 5 years old.
