Don Quixote Distillery & Winery is a subsidiary of Dolin Distillery Incorporated, 236 Rio Bravo, Los Alamos, NM 87544 (505) 695-0817.
Each month we host a class for wine & spirits enthusiasts in our Santa Fe tasting room.
The class presents a history of wines from around the world with a focus on New Mexico’s
distinguished contributions to both the wine and spirits industry. Topics covered include;

  •    History of wines and spirits
  •  Distillation history and the distilling process
  •  Fermentation, filtering, and aging techniques
  •  How to taste, judge, and appreciate wines & spirits
  •  Pairing wines & spirits with food and the role of alcohol in digestion
  •  Etc

In the span of three hours you will taste
several Wines, Ports, and Spirits along with
specialty liqueurs, all hand crafted by Don Quixote at our distillery/winery.  In addition to
the topics mentioned above, you will learn how to read wine labels, when in the course of a
meal different wines should be served, how to store wine, how to pair cocktails with a
meal, the use of wine/spirits in cooking, and the value of drinking wine or spirits after a
meal.  

Class size is limited and reservations are required.  We reserve the right to cancel.
Groups of twelve or more can request a private class.

We serve a sampling of various gourmet breads, cheeses, fruits, and meats to complement
your tasting.  Classes start at 1pm and you should plan on three hours inclusive. We offer
specially discounted hotel accommodations through our promotion partners.

The cost for this event is only $50 per person or $90 per couple.
