We manufacture our brandies in small batches and distill using old world copper
Alembic stills. Our Brandy is barrel aged in French oak using the Spanish solaria
method. Warm days and cool nights combined with desert dryness naturally
cycle the spirits deep into the oak providing a rich smooth character.
Our Brandy stills were specially designed for high elevation. Our distillation
process yields light, softly sweet spirits possessing a unique silky smoothness.
Spirit of Santa Brandy is a mysteriously charming blend of
New Mexico grown grapes and orchard fruits mixed to
capture the unique complexity of the City Different. This
richly colored, slight sweet brandy is smooth on the tongue
and easy on throat while being the perfet after dinner spirit.

Don Quixote Grappas are made from the pomace of New Mexico white wine grapes. We follow
traditional Italian grappa making techniques by collecting freshly pressed pomace (grape pulp &
skins) and fermenting them in open air tanks. We distill the wine and pomace together in a
copper Alembic still. This allows the wine’s spirit to seep through the pomace as it rises through
the still creating a more flavorful grappa.
Fermenting secrets we learned from an old Italian Vinter and combined with distilling craft we
learned from Olha's Dad in Ukraine we were able to develop soft, slightly sweet Grappas that
are much smoother than what you may be used to. You will be surprised.

We made this limited production Malvasia Bianca grappa after experiencing the wonderfully aromatic and delightfully flavorful version of this grape grown in New Mexico. This grappa is aged in French Oak barrels just long enough to mellow the taste without losing its fresh fruity character. We ferment our wines to be sweet and distill in a manner that allows the sweetness to pass from the
wine into the spirit. We then barrel age using the soleria method.

From the apple orchards of the Rio Grande valley, Don Quixote Qalvados is a
supple brandy barrel aged in French oak. Several apple varieties are fermented
into a sweet cider, which is then distilled in a cognac style copper pot still.
In the tradition of George Washington, our nation’s first premier distiller whose
Apple Brandy was renowned throughout the thirteen colonies, Don Quixote
Qalvados is a special treat for those who demand quality craftsmanship and who
desire something beyond the routine.

Pisco is a style of brandy named after a city in Peru much like Port style wine is named after a city in Portugal. The origins of Pisco style brandy probably go all the way back to the Moors who brought distilling to the Iberian Peninsula. It was Spanish missionaries who brought this brandy style to America. In New Mexico, Pisco was first made from native Mission/Muscat grapes in the early 1600s and used as a base for Angelica dessert wine. Today, Muscat grapes are the standard. The two predominate styles of Pisco are loosely referred to as Peruvian and Chilean styles. While both countries proudly claim Pisco as their national drink the World Court has yet to decide which if any rightfully can. Peruvian Pisco is unaged while Chilean Pisco is aged in oak 2 years. Don Quixote Pisqo is aged in French oak but bottled while the youthful brandy still possesses fruity overtones.

Eau de Vie, which is French for “Water of Life,” is a brandy distilled immediately after fermenting and bottled without aging to capture and preserve the fruit flavor. Our Cherry Mon Cherie is made in small batches following centuries old French traditions. We distill one time using a Cognac-style copper pot still immediately after fermentation and bottle after distilling without aging.
To overcome the difficulty of distilling unsettled wine, we employ a technique developed by Probation era Moonshiners called doubling or thumping. The thumper concentrates the spirit’s flavor. Our unique production process makes Mon Cherie the perfect complement to any romantic setting.
